OUR CHEF
Arnaud Bouchard, a chef from the Jura region of France, has been evolving in his career since his first experiences in Jean-Paul Jeunet’s prestigious 2 Michelin star restaurant, from Arbois.
After a rigorous and technical experience, he packed his bags and flew off to discover other culinary cultures in Oceania, Canada, as well as India, Thailand and Myanmar.
Our chef presents himself as a “globe-trotting chef, specialized in gastronomic catering, aspiring to a modern, innovative and ecological cuisine, wishing to bring together the flavors of the world in one plate”.
He has accepted to take on a new challenge of Eurasian fusion cuisine with us for the opening of Uncle Gau.
He creates a menu that reflects his know-how, curiosity and creativity.
All the flavors experienced during his travels in Asia will be infused in his cuisine.
OUR PHILOSOPHY
Our menu is based on products from the Swiss terroir, selected from inspired and inspiring producers, as well as spices, condiments, roots and tastes from the Far East.
A cuisine of sharing that invites us on a journey of senses and transports us for a moment in time from Europe to Asia.
Our beverage menu is made up of natural wines, artisanal ciders, kombuchas from Lausanne, organic and local lemonades, saké selected with care and full of surprises.
Concerned about the environment, we have set up a rigorous organization in terms of supply and management of our products, waste sorting, as well as our consumption of polluting products and more.
For us we are all in this together, we should all be ambassadors in preserving the beautiful planet we are so fortunate to call our home.
